This Lebanese style Zahtar is a subtle, intriguing mix of sumac, thyme, sesame seed and salt widely used in Middle Eastern cuisine. Our Zahtar is based on the Lebanese version of this traditional recipe, with ground almonds added to make a nuttier mixture. Zahtar's "secret ingredient" is sumac - a slightly tart, fruity spice that gives the blend its aromatic edge.
Zahtar is wonderfully versatile. It gives a fragrant "lift" to virtually any meat, fish or vegetable dish and, combined with yoghurt or olive oil, makes a fresh, healthy alternative to fatty dips and spreads.
TO SERVE:
-As a dip: just dip your special bread into fine olive oil (this is delish floated on the top of natural yoghurt) then dunk into Zahtar, this tangy combo is an enticing snack.
-Pita Crisps: Brush pita bread with olive oil, sprinkle with Zahtar, slice with a pizza roller into wedges and lightly crisp in a warm oven. Also excellent on crostini.
-Make the best alternative to garlic bread, substituting Zahtar for garlic. Mix about 1 lge Tblsp. to half cup butter or olive oil. Spread on split french sticks & place in hot oven 5/6 mins (this is supertasty and economical). Watch as this burns easily.
-Add to yoghurt-based mayonnaise for delicious vegetable dips.
-Magic blended with a little natural yoghurt salt & pepper and used as a sauce on kebabs, grilled fish or chicken.
-Use as a seasoning for sauteed vegetables or baked potato wedges.
-Zahtar complements all white cheeses.
-Add to roasted, grilled or stewed chicken, fish and lamb dishes (try mixing some Zahtar into a little butter along with some garlic and black pepper and stuff this under chicken skin before roasting).
-Wonderful as a spread generously mixed with cream cheese or olive oil - this spread can be stored in the fridge in an airtight container for a few days.
-Sprinkle straight into sandwiches or pita pockets
