UMF is short for Unique Manuka Factor, an internationally recognised standard for the non-peroxide antibacterial rating of Manuka Honey. All honeys have some form of antibacterial property, the difference with UMF rated Manuka honey is that their antibacterial activity comes from a non-peroxide action.
